Ribs

 I've been MIA lately because Grad classes are kicking my butt!

Anyway, I've been cooking a lot and informed that I've been posting my food porn to facebook.  I realized maybe I should post some to the 'ol blog!


My parents spent over a month in Armenia, and so I wanted to feed them something they may not have eaten - American food. I made ribs, garlic mashed potatoes, grilled asparagus, fattoush salad (Middle Eastern, yes, but my FAVE!), and a pasta salad (no mayo).  It was so good. Mr John McCain, GOOD JOB! Yum!! Yes, it is apparently John McCains Ribs recipe and one I will certain use again!



John McCain's Rib Recipe
Ingredients:

4 lbs of ribs (I used ~3.25 of pork, but beef works too)
2 T garlic powder  
2 T kosher salt 
2 T black pepper (I used about 1.5 T as out black pepper is fresh ground and strong) 
3 lemons, juiced 

The Directions

I used a smallish crockpot and cut the ribs into pairs, and all of ribs fit comfortably, but I maybe could have squeezed in another pound. Cut the ribs however you like to fit your crockpot. In a small bowl, combine the dry spices.
Rub the rack of ribs with the dry mixture, covering all sides of the ribs. Put them into your crockpot. If you have extra seasoning, pour on top. 

Squeeze the lemons on top of the ribs. 

Cover and cook on low for 7-10 hours, or on high for about 5. The meat will be more tender if you cook it on low. 


I think I cooked mine about 9ish hours and O. M. G.!!!
